Oven Fried Chicken


3 cups chili-flavored corn chips, finely crushed

4 skinless chicken drumsticks

4 skinless chicken thighs

3 tablespoons mayonnaise 


Preheat oven to 400 degrees.

Coat a 15- x 10-inch jellyroll pan lightly with cooking spray.

Place crushed chips in a bowl.

Rub chicken with mayonnaise; dredge in corn chip mixture to coat completely.

Coat chicken lightly with cooking spray.

Place chicken in prepared pan, and place pan on lowest oven rack.

Bake at 400° for 30 minutes. Do not turn. Cover and bake 15 minutes longer. Serve warm.
